Grapes Love Rot ‘n’ Roll

The finest sweet wines in the world are made with grapes affected by noble rot, which is caused by the fungus Botrytis cinerea. If weather conditions aren’t perfect, however, the Botrytis cinerea becomes grey rot, which will taint and ruin the grapes. Some grapes are well-suited for noble rot, like Pinot Gris, Semillon, and Sauvignon Blanc.
