Feels good to be rotten
The finest sweet wines in the world are made with grapes affected by noble rot, which is caused by the fungus Botrytis cinerea. If the weather conditions aren’t absolutely perfect, however, the Botrytis cinerea
instead becomes grey rot, which can only taint and ruin the grapes. Some grapes are well-suited for noble rot, like Pinot Gris, Semillon, and Sauvignon Blanc.
